Shirakawa Kogen Seiryu Ton (Shirakawa Highland Clear-Stream Pork) is a brand pork raised with devoted care in a farm nestled in the rich nature of Shirakawa City, Fukushima Prefecture — drinking pure natural water abundant in minerals. The manager is a local specialty meat retailer, Akimoto Meat Shop Co., Ltd. The breed is a three-breed cross — Large Yorkshire female × Berkshire male sows with Duroc male — inheriting the outstanding characteristics of each breed for both a healthy constitution and superior meat quality. The farm has also been proactive in quality management, with trademark registration in 2006 and Farm HACCP certification obtained in 2022. The rearing approach is also distinctive — a longer-than-usual rearing period of 210 days or more allows the pork to develop a firm accumulation of umami. The feed is a grain-centered compound using corn and barley as the primary ingredients. In the late stage, plant-based protein enriched with Vitamin E is added — suppressing the characteristic pork off-odor while finishing the meat with a rich, flavorful quality. These rearing innovations are reflected in the numbers: compared to standard domestic pork, the fatty acid composition achieves approximately 1.8 times the linolenic acid content and approximately 1.2 times the linoleic acid and oleic acid content. When eaten, the sweetness and richness of the fat spreading the instant it enters the mouth is impressive, with a refreshingly clean finish. The lean also has a firm, satisfying umami — a deepening flavor that grows with every chew. Its versatility in yakiniku, shabu-shabu, curry, char siu, and many more preparations has made it widely loved in restaurants and homes alike as a local Shirakawa City ingredient.
