Soga no Ya no Buta

Raised in the Nasu highlands of Tochigi — a brand pork raised on feed freshly milled in-house every single day, with a commitment to freshness above all.

Soga no Ya no Buta (Soga no Ya Pork) is a brand pork raised at 6 designated farms centered on the Nasu Highland of Tochigi Prefecture — Nasu Farm, Toyohara Farm, Yoshida Farm, Shin-Yugari Farm, Yugari Farm, and Takashiro Farm. The managing body is Soga no Ya Nokou Co., Ltd., headquartered in Hiratsuka City, Kanagawa Prefecture — a producer that has consistently pursued quality from both the farm location and feed management perspectives. At the core of this pork is a thoroughgoing commitment to the feed. Whole-kernel imported corn is self-ground on the day of use and self-blended with soybean meal and other ingredients — maximizing the freshness and nutrition of the feed itself. In the finishing stage, a purely plant-based composition with corn and soybean meal comprising 98% of the total feed is adopted — a simple design with no superfluous components that carefully draws out the authentic sweetness of pork with no extraneous flavors, and a light, lingering umami in the fat. The breed is Cambrough, raised over a patient 184 days to develop a thoroughly refined meat quality. In the rich natural environment of the Nasu Highland, blessed with clear air and pure water, the daily, unfaltering devotion to feed management accumulates over years — realizing a well-grained yet tender texture and a clean, elegant finish where the fat is never too heavy. Annual shipments of 150,000 head are maintained at a large scale, yet the commitment to quality continues without compromise. Handled by tonkatsu specialty restaurants including Katsu-kura, the approachable eating quality — juicy yet without any sense of greasiness — is beloved by a wide range of generations.
