Yashio Pork

Named for the Yashio azalea, Tochigi’s prefectural flower — a Nasu-Shiobara brand pork raised with care on bamboo charcoal and barley.

Yashio Pork is a brand pork produced by Zenchiku Nasu Sanroku Farm Co., Ltd. in Nasu Shiobara City, Tochigi Prefecture. The brand name is derived from the ‘Yashio-tsutsuju’ (Rhododendron pentaphyllum) — the prefectural flower of Tochigi — known as a brand pork embodying the nature and culture of the region. A notable feature of the rearing is the feeding of bamboo charcoal powder-mixed feed during the piglet stage. This regulates the gut environment, promoting the development of a robust, healthy body. During the growth stage, the pigs are fattened slowly on a dedicated compound feed centered on corn and barley — with a rearing period extending to 185 days. Raised with a commitment to the quality of water and feed, and under thorough hygiene management, the pork has a gently reddish meat color, with an exquisite balance of finely-grained lean and well-grained fat. The fat has no superfluous heaviness — a melt-in-the-mouth sweetness and rich depth of flavor can be felt. An initiative of incorporating ‘whey’ (liquid whey from milk during cheese production) into the feed of sows is also practiced, contributing to the health of the sows and improvement of meat quality. Furthermore, from within this, the highest-grade brand ‘Yashio Pork Takumi (Master)’ — produced by extending the fattening period only for female pigs that meet strict standards — is also developed, with the marbled loin meat’s soft and mellow flavor earning high acclaim.
