Raised in Annaka, Gunma, with an unwavering dedication to quality taken to its absolute limit — a richly flavored Joshu brand pork like no other.
This is a brand pork raised by Tago Pig Farm Co., Ltd. in Annaka City, Gunma Prefecture, with the conviction to deliver safe, reliable, and delicious pork. As the word ‘tokoton’ (‘with total dedication’) embedded in its name suggests, an uncompromising commitment is thoroughly maintained in every aspect of rearing. The breed adopts a Cambrough-system cross — a hybrid pig combining Cambrough females with Cambrough PIC265 males. A designated compound feed is given with devoted care, and the pigs are raised slowly and patiently to 170 days. By taking a longer-than-standard rearing period, umami slowly accumulates within the meat quality over time. The result is a meat with rich flavor, and the minimal characteristic pork off-odor is a major characteristic. The meat has a fine grain and a beautiful naturally vivid red color, and when eaten, an elegant sweetness spreads through the entire mouth, with a moist, soft, and pleasant texture to enjoy. The pork raised freely in the countryside of Annaka — also known as a famous plum blossom location — is a versatile ingredient adaptable to any preparation. In tonkatsu, the juiciness is accentuated in contrast with the crispy coating; in shabu-shabu, it becomes a luxurious dish where the umami of the ingredient seeps gradually into the soup. Production volume is approximately 4,000 head annually — not large — and this rarity is also one of the appeals of ‘Ume no Sato Joshu-ton Tokoton.’ Please do savor this deeply nourishing specialty — born of the rich terroir of Annaka City’s ‘Plum Countryside’ (Ume no Sato) — at your table.
