Minamiboso no Meisui Mochi Buta (South Boso Famous Water Mochi Pork) is a pork raised with devoted care on a commitment to the water and feed within the rich nature of South Boso, Chiba Prefecture. The defining feature of this brand pork is its commitment to water. The water used in rearing is groundwater from Kururi, Kimitsu City — the only water in Chiba Prefecture selected for the ‘Heisei Famous Waters 100 Selection’ selected by the Ministry of the Environment. Rain falling in the mountain forests of the Seisosan mountain system is filtered through natural rock strata, welling up as a naturally-self-flowing spring from deep in the ground — this clear water has a mellow sweetness. Raised in combination with this high-quality water and an original designated compound feed, the richness of the water is reflected in the meat quality as well. The name ‘mochi-buta’ originates from the springy, mochi-like elastic texture of the meat. The source of the deliciousness is the balance of finely-grained meat quality and the umami of the fat. The LWD three-breed cross (Landrace, Large Yorkshire, Duroc) pigs are finished at 185 days of age and 115 kg shipping weight — the sweetness of the moderately developed fat and the soft texture born from the fineness of the muscle fibers both coexist. Production is handled by Swine Farm Japan Co., Ltd., established as a direct farm of Nakayama Livestock — founded in Taisho 1 (1912). Approximately 37,000 head are shipped annually from 3 farms within Kimitsu City, distributed throughout Japan through Nakayama Livestock and Tokyo Meat Market after slaughter at Kanagawa Meat Center. The character of this pork stands out especially in simple preparations like shabu-shabu, tonkatsu, and ginger pork stir-fry.
