Royal Sangen (Royal Three-Breed Cross), produced in Chiba Prefecture, is a brand pork born from the accumulation of many years of crossbreeding research. Three breeds carefully selected focusing on meat quality, health, and productivity are crossed — consistently pursuing the maximum drawing out of the pork’s inherent potential. Big Meat Nakamura Co., Ltd., which handles management, carefully raises these pigs at Saito Farm in Yokoshiba Hikari Town, Sanbu District, then slaughters and processes them at Chiba Prefecture Inba Meat Center for delivery to consumers. The production system of finely tracing the process from shipment through to reaching the table, and sincerely working on the supply of safe, reliable pork, also leads to great peace of mind. What is particularly focused on in production is the commitment to the feed. All animal-based ingredients that can cause off-odor are completely excluded — raised only on plant-based feed richly containing starch such as milo, tapioca, and barley — producing high-quality fat. Furthermore, by adding wood vinegar to the feed to regulate the gut environment, the healthy natural growth of the pigs is supported. The major defining feature of the meat quality realized by this rearing environment is the rich oleic acid — an unsaturated fatty acid — content. Oleic acid has the action of suppressing fat oxidation, producing an elegant fat umami with no cloyingness or off-odor. Furthermore, with high water retention, there is minimal drip loss — a soft texture that remains juicy even after cooking can be enjoyed. A specialty whose authentic deliciousness of the ingredient stands out especially in simple preparations such as tonkatsu and char siu.
