The sweetness drawn out by dried satsumaimo and powdered green tea — Kanagawa’s proud brand pork of clean, elegantly refined sweetness.
Kanagawa Yume Pork is a brand pork raised with devoted care by pig farmers within Kanagawa Prefecture under strict certification standards — emphasizing local production for local consumption. Since brand standards were established in 2003, only pigs born and raised within Kanagawa Prefecture, processed at meat centers within the prefecture, have been subject to thorough quality management — with a system in place to distribute in a fresh condition through Yokohama City Meat Market. The core of this brand is the proprietary feed called ‘Yume Pork Designated Blend.’ Dried sweet potato brings a natural sweetness and deep umami to the pork; tea powder (green tea powder) softens the characteristic pork off-odor while finishing the fat to a clean quality. Furthermore, lucerne meal richly supplements natural-type vitamins, contributing to both richness of flavor and long-lasting freshness. Only pigs that have been given this designated feed continuously for 60 or more days are approved as shipping-eligible. The breed is a three-breed cross — Large Yorkshire × Landrace sow crossed with Duroc. By utilizing sows bred by Kanagawa Prefecture’s own line development, the muscle fibers are finished uniformly and finely — realizing a soft, juicy texture. Shipping age is 170 days, with each farmer raising each pig with individual affection. With no cloyingness in the fat, it is compatible with a wide range of Japanese and Western preparations — in shabu-shabu and cold shabu-shabu, the refreshing aftertaste derived from the tea powder stands out further. Also widely familiar in daily table preparations such as ginger pork stir-fry and pork sauté — a brand pork beloved by all ages and genders.
