Tanzawa Kogen Buta

Born of the blessings of animal welfare — a supreme Kanagawa pork overflowing with natural sweetness.

Tanzawa Kogen Buta (Tanzawa Highland Pork) is a brand pork that Tanzawa Farm, rooted in Aiko Town, Aiko District, Kanagawa Prefecture, has continued to commit to since its founding in 1962. Surrounded by the majestic nature of the Tanzawa mountains — the farm’s pigs, handled with integrated management from production through to processing, have a sweet fat and minimal off-odor as their greatest appeal. What stands out particularly in Tanzawa Kogen Buta’s rearing is its sincere approach to animal welfare. Up to 45 kg body weight, the pigs are raised in windless barns shielded from external air effects to build a healthy body — then moved to a fermented bedding floor utilizing indigenous microorganisms. The sawdust flooring stacked to a thickness of 1.2 meters has excellent insulation properties, realizing an environment where the pigs can spend winter warmly. Approximately 1.5 square meters per head of spacious pen space is secured, providing a free-roaming space where pigs can run freely. The feed is also packed with commitment. A proprietary feed is given — combining segregation-managed corn and soybean as the primary ingredients with domestically-grown barley, rice, and sweet potato. The natural sweetness derived from sweet potato gently permeates the fat, producing a clean, refreshing flavor with no aftertaste. During the fattening period, only plant-based oils are used, with antibiotic-free healthy rearing thoroughly practiced. Shipped at approximately 180 days of age and approximately 125 kg — by raising slowly and patiently, finely-grained meat quality and rich umami are nurtured. 13,000 head per year are slaughtered at Kanagawa Meat Center and delivered to tables nationwide through consumer cooperatives and delivery services. Please do experience the difference in simple preparations such as salt-koji grilling, marinated pork, and shabu-shabu that draw out the ingredient’s umami.
