Mangenton, a brand pork representing Kanagawa Prefecture, is a crowning achievement born by Sano Man — a long-established specialty meat shop headquartered in Fujinomiya City, Shizuoka Prefecture — to commemorate the company’s 100th anniversary. Born from a relentless pursuit of ‘what truly delicious pork is,’ Mangenton is raised slowly over 200+ days — approximately 1 month longer than standard pigs. Sweet potato and barley are placed at the center of the feed, with no fat whatsoever added. By ingesting abundant starch, the authentic sweetness and umami of pork naturally accumulate, with feed management at approximately twice the cost of standard pig farming thoroughly maintained. Furthermore, the strict selection standard of only approximately 50 of every 100 pigs being brand-certified further elevates the quality. The meat quality is sweet and richly flavored — yet characterized by a refreshingly clean finish. The fat is not cloying, well-received as easy to eat even by those who dislike fat, and the pork is richer in amino acids — the umami components — than standard pork. After slaughter at Kanagawa Meat Center, ‘Sano Man’ serves as the primary wholesaler handling distribution, with approximately 1,200 head delivered to the market annually. The rearing environment managed by Usui Agricultural Products in Atsugi City prioritizes minimizing stress on the pigs to the absolute maximum. By maintaining the ideal pH level, a finely-grained, juicy meat quality is produced — the authentic umami of the ingredient stands out vividly in any preparation including pork sauté, tonkatsu, shabu-shabu, and salt hamburger steak.
