Koshu Fujizakura Pork is a brand pork in which history and technique have crystallized — born from over 50 years of international exchange between Yamanashi Prefecture and Iowa State, USA. Rooted in breeding pigs gifted from Iowa State in 1959, Yamanashi Prefecture Livestock Experiment Station (now Livestock and Dairy Technology Center) accumulated many years of breed improvement, completing the composite lineage pig ‘Fujizakura DB’ in 2012. This Fujizakura DB is a unique lineage pig crossing Duroc with Berkshire — a special genetic resource unique to Yamanashi Prefecture. Koshu Fujizakura Pork is a four-breed cross (LWDB) — sows inheriting the blood of the Landrace lineage pig ‘Fujizakura,’ crossed with Fujizakura DB males as terminal sires. At the production cooperative farms, based on a detailed rearing manual, a dedicated feed with 70%+ grain including barley, plus canola meal and oligosaccharides added, is given in the finishing stage — elevating the umami and fat flavor. The meat quality is finely-grained, soft, and high water-retentive — with a juicy mouth feel as the appeal. The sweet fat of the marbling melts in the mouth, spreading an elegant flavor. Slaughtered under the strict standard of 170–180 days of age and 110–120 kg body weight, only pork that passes the certification standards of the Yamanashi Prefecture Brand Pork Promotion Council can bear the name ‘Koshu Fujizakura Pork.’ The trademark was registered in 1999, with export achievements to Macau, Hong Kong, and Vietnam as well. Its true value is demonstrated in a wide range of preparations including tonkatsu, shabu-shabu, and ginger pork stir-fry.
