Koshu Shingen Buta (Koshu Shingen Pork), carefully raised at Kakejima Farm in Kofu City, Yamanashi Prefecture, is a dignified brand pork befitting the hometown of warring states general Takeda Shingen. Trademark-registered in 2007 by Oota Sogo Shokuhin Co., Ltd. and certified as Kofu City’s 2nd specialty product — widely known as a brand pork representing Yamanashi. The defining feature is the committed feed — a fat melting point of less than 40°C realized by raising on an original compound feed centered on domestically-grown feed rice (primarily from Yamanashi Prefecture), high-quality bread crumbs (wheat), and soybean. The feel of the fat dissolving instantly from the moment it enters the mouth, and the soft, clean, easy-to-eat meat quality, are major appeals. The higher oleic acid content compared to standard pork is also attracting attention. Oleic acid is an unsaturated fatty acid said to suppress bad cholesterol and help prevent lifestyle diseases such as arteriosclerosis and hypertension — a pork that health-conscious consumers can also choose with confidence. In rearing, by maintaining thorough hygiene management in the barns to boost the immune system of the pigs, healthy fattening without reliance on antibiotics — except in early youth — is realized. The three-breed cross (LWD) pigs, raised slowly over approximately 180 days, are shipped at 115–118 kg. Annual shipments are 700 head.
