A Yamanashi masterpiece raised on wine — a premium pork of outstanding sweetness and tenderness, with a character all its own.

Near Shiozawa in Koshu City, Yamanashi Prefecture — known as a grape production area — there is Japan’s only pork raised drinking a dedicated wine. That is Wainton. Production is handled by Misokawawinton Co., Ltd. Representative Tetsuya Misokawawinton, inspired by an experience of giving wine to a weakened piglet that then recovered, established a unique rearing method. The feed uses a self-blended formulation of bread, kinako (soybean flour), barley, rolled barley, corn, and others. And the defining feature is the dedicated white wine specially brewed at Yamanashi Manns Wine Katsunuma Winery — given twice daily morning and evening from approximately 50 kg body weight through to shipment. Each animal drinks a total of 15 liters of wine in all. The choice of white wine is a craftsman’s commitment to not transferring color to the meat. The result is immediately apparent when eaten. The fat is pure white and clearly finished, with a strong sweetness and clean finish. The lean has fine, aligned fibers — with a moderate elasticity and soft texture to enjoy. The characteristic pork off-odor is also suppressed — reputed to firmly convey umami even with just salt and pepper. Shipping age is approximately 180 days, shipping weight approximately 120–130 kg — carefully finished. Also having obtained ‘Yamanashi Animal Welfare Certification’ — created by Yamanashi Prefecture ahead of other municipalities nationwide — with a commitment to an animal welfare-conscious rearing environment. Suitable for shabu-shabu and yakiniku of course, but also roast pork — preparations that draw out the quality of the ingredient are particularly recommended. Please do savor the premium fat and meat quality nurtured by wine at least once.
