Kousuiton (Red Vinegar Pork), nurtured in the rich nature surrounded by Shinshu mountains, is a brand pork produced by Shinshu E-Loop Business Cooperative Association, based in Kawakamicho, Nagano City, Nagano Prefecture. Characterized by a beautiful crimson color with vivid red meat — with the character ‘Ko’ (crimson) adorning its name. The secret of the deliciousness lies in the proprietary feed. By giving a yeast fermentation feed combining yeast, lactic acid bacteria, minerals, and food manufacturing by-products, the gut environment of the pigs is regulated and digestive absorption is elevated. Food manufacturing by-products (wheat flour, dried soba noodles, cookies, etc.) are carefully nutritionally calculated and formulated in good balance — the pigs grow without getting sick and healthily. Safe, reliable pork with the use of antibiotics and medications suppressed to the absolute minimum. The Kousuiton raised in this way is richly containing unsaturated fatty acids — with a non-cloying fat and clean, refreshing finish as defining characteristics. The muscle fibers are fine — a softness that seems to crumble from the moment it enters the mouth and juiciness can be felt. With virtually no scum or off-odor, the umami can be savored to the fullest even in simple preparations like salt-grilling and shabu-shabu. Only pigs meeting the standard of 180 days of age and 110–115 kg body weight are strictly selected for shipment. The Landrace × Large Yorkshire hybrid cross has outstanding lean and fat balance — approximately 3,000 head are stably produced annually.
