Noto Buta (Noto Pork) is a brand pork carefully raised within Ishikawa Prefecture. Processed at Ishikawa Prefecture Kanazawa Shokunikku Ryutsu Center — only those that have undergone strict grading by the Japan Meat Grading Association may bear the name ‘Noto Buta.’ This pork that has cleared strict quality standards is known as a quality specialty — carefully raised by pig farmers in Ishikawa Prefecture. The great appeal of Noto Buta is its springy, mochi-like meat quality with a thick loin eye, and the natural sweetness that gently spreads in the mouth. With minimal gaminess and a clean, light flavor — yet firm umami can be felt — active in a wide range of preparations. In shabu-shabu, the authentic sweetness and richness of the meat can be fully enjoyed — made into tonkatsu, juicy meat juices spread within the crispy coating.
