Yume Yamabiko Ton (Dream Echo Pork) is a brand pork managed by the Yamabiko-kai, based in Kota Town, Nukata District, Aichi Prefecture. With over a quarter century of history since brand standards establishment in 1998 — boasting large-scale annual shipments of 100,000 head — while maintaining its own standards across all of feed, rearing environment, and breed. Particularly noteworthy is the proprietary brand feed ‘Yamabiko Series’ designated by Yamabiko-kai. This feed blends ‘whole-grain ground corn.’ Whole-grain grinding is a processing method of coarsely crushing with the grain intact — said to have the effect of slower digestive absorption than normally finely ground feed, regulating the pig’s gut environment. Through slow passage through the digestive tract, nutrients are sufficiently absorbed — producing juicy pork with rich meat quality. Furthermore, by adding Vitamin E to fattening pigs, oxidation of the meat is prevented to maintain freshness for longer, also contributing to the softness of the meat quality. The breed is a three-breed cross — (Large Yorkshire × Landrace) female crossed with Duroc. Carefully raised over approximately 170 days to 110–120 kg body weight. The meat quality is deeply flavorful and juicy — with umami difficult to escape even with heat — well-regarded by chefs and home cooking enthusiasts alike. Tonkatsu and ginger pork stir-fry of course — also recommended in shabu-shabu and hot pot dishes for fully drawing out the ingredient’s umami. Farm HACCP obtained in 2021 — also demonstrating high standards in hygiene management and quality assurance. Widely distributed through multiple wholesalers including major companies such as Zen-Noh Meat Foods and Ito Ham — a stable supply system is in place.
