Kishu Umebuta (Kishu Plum Pork) is a brand pork carefully raised at Noda Pig Farm on the banks of the clear stream Hidaka River in Hidakagawa Town, Hidaka District, Wakayama Prefecture. The defining feature of this brand is the blending of Wakayama Prefecture-produced plum vinegar extract into the pig’s feed. Citric acid and polyphenols contained in plum vinegar regulate the gut environment of the pigs — improving nutrient absorption efficiency while also enhancing resistance to disease. The greatest appeal of the healthy pigs raised in this way is that the lard with its low melting point smoothly melts in the mouth.
