Kirishima Olive Red Pork, born from Miyakonojo City, Miyazaki Prefecture, is a pure Duroc breed pig barely distributed domestically or internationally. While many general brand porks are born from three-breed crossing — this pig is a pure breed crossing Duroc with Duroc — also called ‘legendary red pig’ for its rarity. Carefully raised in the rich natural environment of Miyakonojo Basin spreading at the foot of the Kirishima mountain range — under a unique rearing environment minimizing stress to the absolute minimum. A bio-bed developed under technical guidance from the University of Miyazaki is laid in the pigsty — a spacious space where pigs can move freely is secured. By growing while freely moving the body — a firm muscular physique and high-quality meat quality is formed. For the feed — olive pressings uniquely formulated by the managing entity Kirishima Olive LLC and high-quality seaweed containing 60+ nutrients are added. By this, the free glutamic acid as an umami component increases more than normal — a rich, deep flavor is born. The fat in the meat is richly containing oleic acid — a non-cloying sweetness and smooth mouthfeel can be enjoyed. Furthermore, due to the high intramuscular fat unique to Duroc — fine marbling enters even the lean part — softness continues even after heating.
