Kagoshima OX is a brand pork handled by Asahi Farm Co., Ltd., based in Satsuma Town, Satsumagun, Kagoshima Prefecture. A hybrid pig is adopted for the breed — Kenbro 35 female crossed with Duroc-lineage male carrying Berkshire blood — developed aiming to simultaneously achieve high reproductivity and excellent meat quality. For the feed — a base well-balancing rice, milo, and wheat — with the major commitment of adding naturally-derived bamboo vinegar. Bamboo vinegar is said to have gut-regulating action suppressing the growth of harmful bacteria in the intestine and promoting the action of beneficial bacteria — being able to maintain pigs in a healthy condition without relying on antibiotics or medications. The farm’s consistent rearing philosophy of combining clean air, delicious water, and carefully selected feed supports the quality of this pork at the root. The finished pork has fine muscle fibers and high water retention — a moist, soft texture can be enjoyed. With high fat melting point — the fat does not become greasy when eaten — a clean aftertaste remains — also one of the characteristics. Amino acids and neutral sugars as umami components are also richly contained — the deep umami of the meat itself stands out firmly.
