Sakurajima Biyu Ton

Raised on the gifts of Sakurajima and natural hot spring water — a brand pork from Tarumizu, Kagoshima, with a character born of the volcano.

At a highland farm at approximately 550 meters above sea level with a close view of Sakurajima, in Tarumizu City, Kagoshima Prefecture — there are pigs growing up drinking special water. That is Sakurajima Biyu Ton (Sakurajima Beautiful Hot Spring Pork). As the ‘biyu’ (beautiful hot spring) characters in the name indicate — what is used for rearing is natural hot spring water welling from approximately 1,300 meters underground. A weakly alkaline radon spring — said to contain minerals indispensable for living organisms in good balance — with effects of elevating immunity and antioxidant activity. By blending this hot spring water with mountain spring water and giving to pigs in all rearing processes from birth through shipping — healthy pigs with activated biological functions grow. Commitment to feed as well — all-plant-based protein feed as a base — blending live bacteria preparation (Calsporin) and copra flakes (first-pressing pomace of natural coconut oil). By this — while suppressing gaminess — high-quality fat richly containing medium-chain fatty acids is slowly accumulated. In the piglet period — raised in a facility with computer-controlled optimal temperature, humidity, and ventilation management — a rearing environment with stress eliminated to the extreme is the foundation producing high-quality meat quality. The meat of Sakurajima Biyu Ton thus carefully raised — pale pink-red in color and lustrous — the near-pure-white fat is characterized by good firmness and fineness. When eaten — an appropriate texture and fragrant flavor spreads — absolutely no gaminess. The fat is clean — yet a gentle sweetness and umami is firmly felt. A brand pork representing Kagoshima — also once adopted as JAL First Class in-flight meal.
