Umaiton is a brand pork raised at Oya Farm in Chitose City, Hokkaido. It was born in 2011 through a collaboration between Hokuren Federation of Agricultural Cooperatives and JA Do-o, with the goal of improving Japan’s domestic food self-sufficiency rate. Its greatest defining feature is the wagyu-like marbling fat that results from giving a dedicated feed containing 15% Hokkaido-grown feed rice for 50 or more days before shipment. Fine, wagyu-style sashi permeates the entire lean — a trait almost never seen in standard pork — delivering a distinctive sweetness and a rich, full-bodied umami. Careful research and adjustment of the amino acid balance and fatty acid composition of the feed also suppresses the characteristic off-odor of pork, resulting in a clean and refreshing aftertaste. The use of Hokkaido feed rice introduces domestic ingredients into pork feed that would otherwise depend on imported materials, contributing to local production for local consumption. Even when Hokkaido-grown rice falls short, domestic rice is substituted to balance quality with stable supply. The soft, silky meat quality is outstanding in shabu-shabu and sauté, and is perfectly suited for preparations that bring out the maximum flavor of the ingredient itself. Quality has been widely recognized through awards including the Excellence Prize at the 15th Brand Pork Popularity Contest in 2017 and the Grand Prize at the Hokkaido Carcass Competition (pork category) in 2022.
