Shari Town in Shari District — born of the vast, wild nature of Hokkaido’s Shiretoko. In this magnificent environment, Sasaki Livestock Farm Co., Ltd. poured years of rearing expertise and passion to create ‘Takumi no Buta Sachiku Mugiou.’ With rearing space said to be approximately twice the standard of ordinary pig farms, rice straw filled to a depth of 30 centimeters creates a clean, stress-free environment aligned with the natural instincts of pigs — each animal raised with devoted attention. The feed uses a dedicated compound based on barley as the primary grain, containing no animal-based fats, and all barns undergo weekly straw replacement and cleaning without exception. This unwavering commitment to hygiene and comfort forms the solid foundation of each pig’s condition. Raised over 190 days at an unhurried pace in this environment, the fat is pale, smooth, and gently sweet; the lean has high moisture retention and a springy, satisfying finish. When heat is applied, the umami slowly spreads and the finish is refreshingly clean, gently elevating the overall flavor of any dish. With no distracting off-odor, the authentic deliciousness of the ingredient can be enjoyed simply and directly. The three-breed cross configuration with Duroc boars supports uniformity and consistency of meat quality, allowing the pork’s true character to shine in shabu-shabu, stir-fry, braised dishes, and more. Trademark registration was obtained in 2013, and GI registration has also been completed — the producer’s commitment and unwavering quality officially recognized by the national government.
