Tategamori Kogen Buta is a brand pork raised at Ark Fujisawa Farm (Arc Co., Ltd.) in the lush highland of Fujisawa Town, Ichinoseki City, Iwate Prefecture. In an environment blessed with Iwate’s pure air and nature, every individual pig is raised with devoted care. The breed is Babcock-Swine — the world’s first breed to receive a meat quality patent from the American Meat Quality Association (Landrace × Large Yorkshire female × Duroc male cross) — whose superior meat quality is firmly established. The lean has a moderate elasticity, a refreshingly light umami beneath which lies a genuine richness. The fat is virtually free of off-odor, well-received even by those who don’t usually enjoy pork fat, and versatile across a wide range of preparations from shabu-shabu to yakiniku. The feed uses a proprietary original blend of milo, barley, rice, and herbs, primarily centered on non-GMO ingredients. The complete exclusion of animal-derived ingredients is the secret to drawing out the clean, authentic flavor of the pork. Raised slowly over approximately 180 days, the result is a finish of both rich umami and outstanding texture.
