Eco no Mori Waraibuta (Eco no Mori Eco-Boo) is a brand pork managed and produced by Sugayo Co., Ltd., based in Yokote City, Akita Prefecture. The brand’s wish — to realize a table where the whole family gathers in smiles — is inscribed in the name itself. Rearing takes place at company-owned farms in Yokote City, Akita, and Kanegasaki Town, Iwate, with a distinctive rearing system built at each farm in connection with the local food culture. The defining feature is a liquid fermented feed system called ‘liquid feeding.’ An eco-feed — fermented food loss such as bread and noodles with the addition of whey and lactic acid bacteria — is given daily, raising pigs while simultaneously achieving both reduction of food waste and reduction of CO2 emissions. By adopting this advanced method widespread in Europe, the farm maintains a high standard of pig health while minimizing environmental impact. The breed is TOPIGS20 — a hybrid pig that is mainstream worldwide but found at only a few percent of farms within Japan, making it a rare bloodline domestically. This unique combination of rearing method and breed produces pork with approximately one-third fewer calories and lower cholesterol levels compared to standard pork. The meat quality is finely-grained and tender, the fat carries an elegant sweetness and rich umami, and it pairs particularly well with shabu-shabu and sliced preparations.
