Tategamori Kogen Buta Noah

Raised in the highlands of Tategamori, Iwate — a brand pork that shines with the exceptional umami of its lean red meat.

Tategamori Kogen Buta Noah is a brand pork raised in the rich natural environment of Fujisawa Town, Ichinoseki City, Iwate Prefecture. Arc Co., Ltd. (Ark Tategamori) manages the brand in an integrated system at two dedicated farms — Ark Sakanoueno Farm and Kuronokisawa Farm — with thorough attention to breed, feed, and hygiene management as three pillars, producing safe and high-quality pork. The defining characteristic of Noah is the firm umami and richness residing in its lean. The breed is a three-breed cross — Danbred as the maternal line (Landrace × Large Yorkshire), with Duroc as the paternal line — developing a powerful, firm meat quality with tightly structured muscle fibers. While the lean delivers a full and satisfying eating experience, the fat has virtually no off-odor and carries an elegant sweetness — enjoyed in everything from bone-in loin prepared boldly, to yakiniku and shabu-shabu across many occasions. The rearing takes approximately 170–180 days for patient, unhurried fattening, with a dedicated compound feed incorporating herbs such as thyme and rosemary to suppress pork off-odor. Instead of the corn typically used in standard pig feed, milo, barley, and feed rice are used as the primary ingredients — all non-GMO. The complete exclusion of animal-derived ingredients further contributes to the clean flavor and high-quality meat. Despite maintaining a large-scale and stable annual shipment of 110,000 head, the farm holds both Farm HACCP (obtained 2013) and JGAP (obtained 2017) certifications, establishing a thoroughgoing hygiene and quality management system.
