Michinoku Hanagasa Buta is produced by Yamagata Big Farm Co., Ltd. in Yamanobe Town, Higashine District, Yamagata Prefecture — a company that manages and continuously improves everything from breeding pig production through to shipment. The breed is a three-breed cross — Landrace × Large Yorkshire sows with the richly marbling Duroc male. Named in honor of Yamagata’s Hanagasa Matsuri festival, it is a glamorous brand packed with the terroir of the production area and the farm’s accumulated expertise. Yamanobe Town, where the farm is located, is a land of rich natural beauty blessed by the gifts of the Ou mountain system including Mount Gassan. Raised carefully with ample pure subterranean water from the Gassan system, the meat quality is honed in an environment where the pigs can thrive freely.
