Bunabuta (Kashiwa Oak Pork) is a brand pork raised in Daigo Town, nestled in the mountains of the Okukuji region in northern Ibaraki Prefecture. In this land blessed with pure natural water welling up from the Yashiro mountain system and clear air, Hitachi Farm Co., Ltd. raises each animal with devoted individual care. Ancient kashiwa oak trees are scattered around the farm, and from their shade the mountain ridges of distant Yashiro can be glimpsed. This tranquil, gentle natural environment provides the pigs with ideal growth conditions of minimal stress. The breed is a three-breed cross — Landrace × Large Yorkshire sows with Duroc male — grown slowly over 175 days. The feed is a proprietary blend of corn, soybean, and coconut-derived components, with the composition fine-tuned through regular lipid analysis — maintaining a consistently stable meat quality over many years. The finished meat is characterized by a beautiful appearance: brilliant white, lustrous fat and a vivid salmon-pink lean. Raised drinking natural water, the pigs have minimal characteristic pork off-odor, making them ideally suited to preparations that draw out the ingredient’s authentic flavor to the fullest. Even in simple salt-grilled or stir-fried preparations, the sweetness and umami of the fat are clearly pronounced — and with a single bite, the rich nature of Okukuji can be felt. Distributed primarily through Tokyo Meat Market and Ibaraki Prefecture Meat Market, approximately 16,000 head are shipped annually.
