Okutone Mochi Buta is a brand pork produced in Showa Village, Tone District, Gunma Prefecture, raised with devoted care in the rich nature of the Okutone area. The managing body is the Okutone Pig Farming Research Group — local producers working together, including on the improvement of breeding pigs, maintaining safety and high quality while devoting themselves to rearing with care. The commitment in rearing is to the dedicated feed. A grain-centered compound feed is given continuously from approximately 120 days of age through to shipment, raised slowly on a diet centered on plant-based ingredients. The results are clearly apparent in the meat quality: finely-grained and firm, retaining moisture firmly — a moist, soft texture that continues long after heat cooking. The fat is clear white, and the lean is a bright pink color — the beautiful appearance is also one of the appeals. The minimal off-odor is also a major characteristic — the clear, authentic umami of pork can be enjoyed directly. Shipping age is approximately 180 days. By raising over sufficient days, depth and richness accumulate firmly in the very depths of the meat. The breed is a three-breed cross — Landrace × Large Yorkshire sows with Duroc male — drawing out the advantages of each breed to realize a well-balanced meat quality and rich flavor. The representative way to eat it is tonkatsu. The springy, mochi-like texture and abundant umami are sealed within the coating, and with a single bite the richness of Okutone is conveyed.
