Ida-san-chi no Buta (Mr. Ida’s Farm Pork), raised by Ida Farm in Fukaya City, Saitama Prefecture, is a brand pork with a producer’s face clearly visible. This pork, carefully crafted by representative Hitoshi Ida, is characterized by sweet and clean fat and a soft, off-odor-free meat quality — the elegant sweetness is said to be well-received even by those who dislike pork. Fukaya City is known nationwide as a producer of scallions, but the same rich agricultural land also supports the rearing of brand pigs, with sweet potatoes grown on that same soil utilized as pig feed. The key to the deliciousness lies in the proprietary feed design. By combining dry noodles (a wheat-derived food manufacturing by-product) and feed rice with the compound feed, the whiteness and richness of the pork fat is drawn out while simultaneously achieving sweetness and a clean finish. Agricultural research has shown that feed rice-fed pigs tend toward a moist meat quality and increased sweetness — the synergistic effect with wheat-derived dry noodles is thought to produce the ‘sweet and clean’ flavor. The active utilization of food manufacturing by-products is also recognized from a resource-cycling perspective. The breed adopts Choice Genetics (an overseas composite pig) — with outstanding balance of growth and meat quality, characterized by finely-grained meat quality and uniform loin thickness. Raised slowly over 165+ days, shipped at approximately 115 kg — the deep umami of the meat can be fully enjoyed. Slaughter is carried out at Honjo Meat Center, with approximately 4,000 head distributed annually through major wholesaler Kobayashi Livestock.
