Kaori Buta (Fragrant Pork), produced by Matsumura Farm Co., Ltd. located in the farming district of Kazo City, Saitama Prefecture, is a brand pork whose rich flavor and aroma stand out — true to its name. The defining feature of Matsumura Farm — which has walked the path of pork exclusively for over 50 years since founding — is being the only certified farm of the Japan SPF Pig Association within Saitama Prefecture. SPF means ‘Specified Pathogen Free,’ a designation that can only be borne by pigs raised in a clean environment with pathogens rigorously excluded. The commitment to Kaori Buta’s feed is also first-class. High-quality whole-kernel corn is given after full-grain milling on the spot — the starch is finely crushed, digestive absorption is enhanced, and a sweet, high-quality fat accumulates within the pig’s body. This rearing method is the source of the sweet, melting umami of the fat felt when eaten. At Matsumura Farm, empty barn periods are set for thorough washing and disinfection, with veterinarians visiting regularly to maintain biosecurity. The pigs grown healthily have finely-grained muscles with high water retention — finishing the entire dish with juiciness. The farm’s capabilities have been proven by numerous contests — winning consecutive ‘Honorary Prize’ and ‘Minister of Agriculture, Forestry and Fisheries Award’ at the Saitama Prefecture Pig Carcass Competition.
