Saitama-kensan Imobuta (Saitama Prefecture Sweet Potato Pork), born in Fukaya City, Saitama Prefecture, is a unique brand pork that incorporates locally-grown sweet potato into its feed. Fukaya City is nationally known as a scallion production area, but the initiative of utilizing sweet potatoes grown on the same rich land as pig feed creates a distinctly outstanding meat quality. The feed combines Fukaya City-grown feed-use sweet potato with compound feed. Sweet potato is a plant-based ingredient richly containing sugar and starch — when given to pigs, the fat melting point lowers, and an elegant fat sweetness that gently melts from the moment it enters the mouth is born. Furthermore, glutamic acid and aspartic acid — umami components — increase, with a deep flavor spreading with every chew. The breed is a three-breed cross — Large Yorkshire × Landrace sows with Duroc male — known for the richness of lean umami and solid build. The finely-grained, soft meat quality and mellow fat balance shine in a wide range of preparations including tonkatsu, ginger pork stir-fry, and shabu-shabu. Shipping is at 180 days of age, approximately 115 kg, slaughtered at the hygienically excellent Honjo Meat Center. The managing body, Imobuta Co., Ltd., obtained Farm HACCP in 2019 — thorough safety rearing environment and quality management in place. The brand trademark was registered in 2008, with brand standards also established the same year — a local brand with history.
