Bushu-ton (Musashi Province Pork), raised by Sakamoto Farm in Yorii Town, Osato District, Saitama Prefecture, is a brand pork appealing for its umami and clean, refreshing finish. Trademarked under ‘Bushu-ton’ for fresh cuts and ‘Balzwein’ for processed products, the trademark was obtained on June 17, 2011. At Sakamoto Farm, the small-scale operation of 200 sows is leveraged to provide devoted, individual care to each animal. Air conditioning is installed in the barns year-round to maintain a comfortable environment for breeding boars. Feed amounts are adjusted per sow, with back fat inspections carried out for thorough health management. At the time of piglet birth, careful supervision of colostrum intake ensures the rearing of healthy pigs. The feed adopts an original blend of plant-based feed centered on whole-kernel corn, combined with charcoal, rice, and eco-feed. The commitment to plant-based ingredients produces the clean, refined flavor and the never-tiring lean umami unique to Bushu-ton. The breed is LWD three-breed cross — Landrace female × Large Yorkshire male crossed with Duroc male — shipping age 180 days, shipping weight 115 kg. Annual shipments are approximately 4,000 head, distributed through Seiken Commerce. Pairs well with a wide range of preparations including tonkatsu and shabu-shabu that draw out the refreshing lean umami, and ginger pork stir-fry where the sweetness of the fat stands out. Sausage made from self-farm Bushu-ton won a gold medal at the German International Contest — its quality is recognized internationally as well.
