Diamond Pork is a Chiba Prefecture brand pork maintaining the pure Middle Yorkshire breed — its greatest appeal, as its name suggests, is the brilliantly white fat shining like a jewel. The Middle Yorkshire breed, widely raised in Chiba Prefecture in the Showa 30s (1950s–60s), has been revived for the modern era, and by raising it carefully on a proprietary compound feed, the rich flavor that Japanese pork once possessed is conveyed to the present day. Unlike the common three-breed cross, the finely-grained meat quality unique to a pure breed produces a moist mouth feel. The fat is white with transparency — when it enters the mouth, an elegant sweetness and richness that spreads gently. Not merely soft — the deep umami felt with every chew is a defining characteristic — the appeal stands out most clearly in simple preparations that draw out the quality of the ingredient. Management is handled by the Chiba York Research Group, with production at 3 farms in Sosa City, Katori City, and Tomisato City. Shipping is at 230–240 days of age, body weight approximately 120 kg — raised more slowly than standard pigs. With slow growth and fewer piglets, annual shipments are approximately 1,000 head — a brand pork of high rarity value. Slaughter is carried out at Chiba Prefecture Meat Corporation, with distribution handled by Toso Meat Center. In shabu-shabu and sukiyaki, the sweet umami of the clear fat melts into the soup and broth for a truly exceptional dish.
