Shonan Miyaji Buta (Shonan Miyaji Pork), raised at a self-owned farm in Fujisawa City, Kanagawa Prefecture, is a rare brand pork with only approximately 130 head shipped monthly. Miyaji Pork Co., Ltd., which handles production, continues rearing with an absolute commitment to flavor under the philosophy of ‘abandoning efficiency to deliver truly delicious pork’ — with representative Yusuke Miyaji pursuing taste to the very end. The defining feature is the content of free glutamic acid — the umami component. While standard domestic Grade-A pork contains approximately 16 mg, Miyaji Buta contains approximately 26 mg — approximately 2 times. The meat quality is finely-grained — the juiciness spreading from the moment of eating and the sweetness increasing with every chew are the appeals. The fat is richly containing oleic acid — a clear, non-heavy finish with no lingering in the stomach is also a defining characteristic. The feed uses a proprietary blend specially formulated with wheat, barley, sweet potato, and rice. Drawing a clear distinction from the standard corn-centered feed — drawing out a white, beautiful fat and rich umami. There is also a commitment to the rearing environment. ‘Hara-gai’ (litter-based rearing) is adopted — raising approximately 10 sibling piglets comfortably in a space that normally holds 20+ — with stress on the pigs eliminated to the absolute minimum.
