Carefully produced by Okada Yoshinobu of Okada Pig Farm — adopting a three-breed cross of ‘Medium Yorkshire × Large Yorkshire’ sow crossed with Duroc male — combining high quality with stable production. Originally producing with Landrace pigs, the entire herd was switched to this rare breed — the producer’s commitment and conviction to the breed is evident. The feed uses compound feed as the base while proactively incorporating recycled feed — also working on reducing environmental burden. Furthermore, by self-blending multiple ingredients including soybean, buckwheat, and yogurt in combination according to seasonal changes, the arrangement is designed to further draw out the authentic umami of the Medium Yorkshire. By raising slowly over 200 days before shipment, the meat quality is finely-grained — entering the mouth, a subtly natural sweetness and elegant fragrance spreads.
