Raised in the valley between the Southern and Central Alps — a supreme Shinshu brand pork born of a devoted, carefully crafted feed.

In the Ina Valley of Iijima Town, Nagano Prefecture — nestled between the Southern and Central Alps — Hayashi Farm Co., Ltd. raises with devoted care two brand porks overflowing with individuality: ‘Genbuta’ (Phantom Pork) and ‘Shinshu Yukibuta’ (Shinshu Snow Pork). The feed uses an independently blended formulation of local buckwheat, rice koji, almonds, and others. Rutin derived from buckwheat has antioxidant action; the fermentation components of rice koji regulate the gut environment and support the pig’s health. Nuts including almonds add a premium flavor to the fat. This plant-based-centered feed design is the secret to drawing out the pig’s inherently fine-grained meat quality and sweetness. The breed incorporates the rare Medium Yorkshire — even within Japan — into the maternal lineage. The Medium Yorkshire has the characteristic of extremely fine muscle fibers that readily develop marbling. By crossing with Duroc — known for powerful umami — a pork of both delicacy and depth is born. ‘Genbuta’ was trademark-registered in 2003 and ‘Shinshu Yukibuta’ in 2004 respectively — both brands are raised over approximately 240 days — longer than standard pigs — growing slowly. By taking time, the umami of the meat is firmly concentrated, and the sweetness of the fat becomes richer. In shabu-shabu, a clear, transparent broth can be enjoyed — in tonkatsu, the result is crispy outside and juicy inside. Regardless of cut — loin, belly, and more — a pork in which the authentic deliciousness of the ingredient can be savored just as it is. Annual shipments approximately 2,000 head — rare.
