Junpaku no Bianca (Pure White Bianca) is a brand pork born from the collaboration of Sato Shokunikku Meat Center Co., Ltd., based in Agano City, Niigata Prefecture, with Yasuda Yogurt and Nagaoka Farm. ‘Bianca’ means ‘white’ in Italian — a name overlapping the whiteness of the whey (liquid separated from milk in yogurt production) and the snow-deep winter scenery of Niigata. The defining feature of this brand is the feed. By giving pigs the whey generated in the process of Yasuda Yogurt producing yogurt, the fat becomes transparently white, with a crispy texture and elegant sweetness born. Abundant lactic acid bacteria and nutrients suppress the characteristic pork off-odor, realizing a clean finish. A premium pork friendly even to women — dispelling the conventional image of pork as having ‘heavy fat.’ Pigs carefully raised at Nagaoka Farm in Nagaoka City are slaughtered at Nagaoka City Meat Center, then distributed through Sato Shokunikku. With a rare shipment of approximately 25 head per week, it is a brand of high rarity. For the most simply savoring the white, clean fat and soft lean — shabu-shabu and cold shabu-shabu are recommended. Even in hot water, scum is minimal — the authentic umami of the meat is conveyed directly. In pork belly ginger pork stir-fry and yakiniku, the balance of sweet fat and fragrance stands out. Junpaku no Bianca — born of three-company collaboration — obtained trademark registration in 2017 as a proud Niigata Prefecture brand pork.
