Hida Umabuta (Hida Delicious Pork) is a brand pork managed by the Hida Umabuta Council, based in Yamagata City, Gifu Prefecture. Under the basic philosophy of ‘safe, reliable, and delicious pork,’ the pigs are raised from birth to shipment on feed containing absolutely no antibiotics or synthetic antimicrobial agents. At designated farms within Gifu Prefecture, ventilation equipment and hygiene management are thoroughly maintained — a high consciousness of food safety supports the foundation of this brand. The secret of the deliciousness lies in the commitment to the dedicated feed and breed. In the late fattening stage, a dedicated feed with 30%+ wheat and 10%+ feed brown rice is used. Wheat is aimed at the umami of the lean; rice is aimed at improving oleic acid content — realizing an elegant, sweet fat and finely-grained, soft lean. Furthermore, by using EM (Effective Microorganisms) feed to regulate the gut environment — finished as healthy pigs. In breed, a four-breed cross incorporating black pig (Berkshire) crossing for meat quality improvement. Shipping age approximately 170 days, shipping weight 117 kg — shipped after thorough raising. Winning the Japan Agriculture Grand Prize in 2022 — production technology and quality are also evaluated within the industry. Hida Umabuta is suited to a wide range of preparations including shabu-shabu, tonkatsu, and sauté. With high oleic acid and clean fat — in shabu-shabu, with no cloying fat and the umami dissolved into the broth also outstanding. In tonkatsu, the soft, juicy lean umami stands out. Widely distributed to volume retailers, specialty shops and others through primary wholesaler Gifu Agri Foods — approximately 19,000 head are shipped annually.
