Yoro Sanroku Buta (Yoro Foothill Pork) is a carefully committed original brand pork produced by Yoro Meat Co., Ltd., headquartered in Yoro Town, Yoro District, Gifu Prefecture. Imagining the rich nature of the Yoro mountain foothills — with their beautiful mountains, clear water, and surrounded by greenery — this brand was trademark-registered in December 1999 (Heisei 11). The defining feature is a thorough emphasis on the quality of the meat itself regardless of production area. Quality management is handled by employees of Yoro Meat Co., Ltd. — certified by the Japan Meat Grading Association. From domestically-produced pork brought in to Yoro Meat, strict selection is made on three criteria — meat quality, meat color, and firmness — and only those clearing these criteria are given the name ‘Yoro Sanroku Buta.’ The committed stance of selecting by quality regardless of production area enables consistently delivering a high standard of deliciousness in a stable manner. When it enters the mouth, the concentrated umami within the lean gently spreads — the fat is light with no sense of cloyingness. The soft meat quality is also healthy — in loin shabu-shabu, the rich flavor can be fully enjoyed in both warm and cold shabu-shabu. Also pairs well with a wide range of preparations such as shoulder loin yakiniku, ginger pork stir-fry, and tonkatsu — approximately 1,200 head are shipped annually through Yoro Town Municipal Meat Business Center and Gifu City Meat Market. The breed is a three-breed cross — Landrace × Large Yorkshire female crossed with Duroc male — with shipping age approximately 180 days and shipping weight approximately 110–120 kg as the standard.
