Ise Umashi Buta (Ise Delicious Pork) is a brand pork managed by the Mie Prefecture Brand Pork Dissemination Council, headquartered in Tsu City, Mie Prefecture. Raised at designated farms within Mie Prefecture — since brand standards establishment in 2006, it has attracted attention for its unique feed and high meat quality. The defining feature of this brand is the special feed blend carried out during the finishing period. In addition to standard compound feed, ‘wood vinegar,’ ‘flaxseed oil,’ and dried peel of the rare citrus ‘Niihime’ (Citrus natsudaidai × Citrus sudachi cross) cultivated in Kumano City, Mie Prefecture, are blended and given. Wood vinegar has deodorizing and gut environment improvement effects — working to suppress the characteristic pork off-odor. Flaxseed oil is richly containing omega-3 fatty acids — said to affect the flavor and softness of the meat. Niihime peel contains polyphenols and essential oil components — playing the role of imparting a refreshing fragrance to the meat. Through the synergistic effect of these three ingredients, rich umami and strong richness — and a clear, refreshing finish — are realized. The breed is a three-breed cross — Landrace × Large Yorkshire crossbred female (or the reverse) for the sow, Duroc for the sire. Finished to approximately 110 kg body weight over 160+ days. The meat quality is finely-grained, with the authentic umami of pork concentrated — with minimal off-odor, applicable to a wide range of preparations. As an ingredient rooted in Mie’s food culture alongside Matsusaka beef — the character stands out in tonkatsu, sukiyaki, shabu-shabu, and steamed dishes.
