Kobe Pork

Raised on Kobe’s underground water and a proprietary feed — a healthy, umami-rich brand pork that Hyogo is proud of.

Kobe Pork is a brand pork with integrated production by Takao Farm Co., Ltd., based in Nishi Ward, Kobe City, Hyogo Prefecture. At the farm located in the green-rich agricultural area of Nishi Ward, Kobe City — pure groundwater drawn from 120 meters underground is used as drinking water — the pigs are carefully raised in a comfortable, low-stress environment with managed temperature and humidity. Shipping age is set at the longer-than-standard 180 days — by taking time, the meat quality is finished finely-grained and taut. The breed is a three-breed cross — Landrace × Large Yorkshire F1 sow crossed with Duroc male — outstanding in the balance of lean umami and appropriate fat. For the feed, a dedicated compound feed reinforced with Vitamin E — with 5% bread crumbs added to low-protein feed — is continuously given for 60+ days. By suppressing excess protein, the result is minimal off-odor with a clean, elegant flavor. Certified with Hyogo Prefecture Certified Food status — distributed centered on local Kobe as safe, reliable pork. Approximately 5,000 head are slaughtered annually at Kobe City Meat Market — in addition to entering the market through Kobe Chuo Chikusan Nuke, it is also developed as processed products including salt-koji marinated and miso-marinated. Farm HACCP also obtained — with thoroughgoing hygiene management — and with Hong Kong export achievements, receiving high evaluation both domestically and internationally as pork of the Kobe brand.
