Kano Kogen Ton (Kano Highland Pork), produced by Kano Farm — which has its farm in the deep mountains of Shunan City, Yamaguchi Prefecture, in the headwater area of the Nishiki River — is a brand pork representing Yamaguchi Prefecture, carefully finishing the Hypor breed with a unique rearing philosophy. Hypor is a high-performance cross breed born in the Netherlands — evaluated for its excellent meat quality and high production efficiency, supported by many producers in Japan as well. At Kano Farm, the barns are simultaneously completely replaced at each rearing stage — by thoroughly securing the empty barn period and conducting cleaning and disinfection, stress and disease risk between pigs is minimized. By also combining a meticulous medication program centered on vaccines, stable health management is realized. The feed is a Kano Farm proprietary blend of grains, domestically-grown rice, and seaweed powder — this designated feed is given for 110+ days before shipment. Furthermore, from the fattening stage where body weight exceeds 30 kg, the feed is switched to completely medication-free — with a rest period exceeding the Ministry of Agriculture, Forestry and Fisheries standard, realizing safe pork with no concern for residual antibiotics. What the accumulation of such devoted efforts produces is a moist yet appropriately elastic lean, and a white fat with a subtle sweetness — a smooth, clear quality felt when it enters the mouth. Approximately 45,000 head are shipped annually from multiple bases including the head office farm, Abu Farm, and Mihara Farm — ISO 9001 also obtained for quality assurance. Even in the height of summer, the cool highland environment supports the pigs’ healthy growth — beloved by fans nationwide through ginger pork stir-fry, steak, and company-manufactured ham and sausage.
