Unzen Umaka Ton ‘Momiji’ (Unzen Delicious Pork ‘Autumn Leaves’), a brand pork nurtured receiving the full bounty of the majestic Unzen mountain foothills spreading across the Shimabara Peninsula of Nagasaki Prefecture. The name is said to be named overlapping the beauty of the autumn leaves — a representative autumn feature of Unzen — with the vivid color and deep umami of the pork. Production is handled by members of Kaitaku Nagasaki Agricultural Cooperative — in the majestic nature of the Shimabara Peninsula blessed with clear air and rich water, each individual is fattened slowly and carefully with affection. The appeal of this pork is the premium, smooth texture and the rich, flavorful umami spreading throughout the mouth with every chew. The secret to producing this richness is the feed. By continuously giving a strengthened compound feed richly containing plant components utilized as Kampo herbal medicine ingredients over a long period — the authentic umami of pork is concentrated, while simultaneously drawing out an elegant, delicate flavor without the characteristic pork gaminess. The breed adopts a three-breed cross — Duroc male with Large Yorkshire × Landrace female — producing pork with outstanding fineness of meat quality and umami balance. By raising slowly from 180 to 210 days of age — finishing as rich pork with umami fully concentrated.
