Nagasaki Daisaikai SPF Ton (Nagasaki Greater Saikai SPF Pork), raised in Saikai City, Nagasaki Prefecture, is a committed brand pork produced by thoroughgoing hygiene management and a healthy rearing environment. ‘SPF’ stands for Specific Pathogen Free — meaning raising piglets born from healthy sows in a clean environment where disease-causing bacteria cannot intrude. At Daisaikai Farm — upon entry and exit of the farm, vehicle and personnel disinfection is thoroughly maintained, and staff are obligated to shower and change into dedicated clothing before entering the pigsty — a thoroughgoing disease prevention system is in place. The SEW method (Segregated Early Weaning) is adopted — by separating rearing in stages from pregnancy/farrowing barn through piglet barn and further to fattening barn — pathogen intrusion from outside is blocked. A designated compound feed richly containing barley, wheat, and feed rice is used — in the finishing period, further abundant grains are given to draw out rich umami. Furthermore, by utilizing food by-products such as shochu lees and syrup lees in liquid feed — minimal drip is produced, with a rich, deep flavor born. After 70 days of age, feed is switched to antibiotic-free — thoroughgoing production of pork that can be put in the mouth with confidence. The meat born from such devoted rearing has fine muscle fibers and a smooth texture. The sweetness of the fat and the authentic umami of pork spreads in the mouth — minimal scum during cooking is also a major appeal.
