The defining characteristic is blending kansho meal derived from domestically-produced sweet potato into the feed in the finishing fattening period. A feed carefully dried and processed from sweet potato trimmings born in the manufacturing process of southern Kyushu’s imo-shochu and karinto confections — given to the pigs for 60 or more days before shipping. The high-quality starch and dietary fiber richly contained in sweet potato — while appropriately suppressing excessive fat accumulation — slowly draws out the inherent sweetness and umami of the meat. The breed is a three-breed cross pig of Landrace, Large Yorkshire, and Duroc.
