Yuzu Pork is a committed brand pork handled by Nanchiku Co., Ltd., which has production bases in Miyazaki and Kagoshima Prefectures. Drawing attention as a flavorful pork born from incorporating yuzu citrus from Soo City, Kagoshima Prefecture — known as one of southern Kyushu’s leading yuzu production areas — into the feed. In rearing — a company original dedicated feed blending yuzu is given from 2 months before shipping. This yuzu is richly containing antioxidant components such as Vitamin C and citric acid — greatly contributing to pork quality improvement. The breed raised is a three-breed cross — Duroc male crossed with a sow born from Landrace female × Large Yorkshire male — drawing out well-balanced meat quality and umami. The outstanding characteristic of Yuzu Pork is the richly containing stearic acid — one type of saturated fatty acid — and having excellent antioxidant power. Less cloying fat — the aftertaste is clean yet umami is firmly felt — an appeal. Also richly containing imidazole dipeptide — known as a fatigue recovery component — with content varying by cut of fillet 440mg, loin 380mg, leg 310mg. Furthermore, also having the pleasing characteristic of minimal scum when used in simmered preparations and shabu-shabu — the ease of cooking is also well-received. As eating methods — tonkatsu and katsu curry crispy-fried thick, and shabu-shabu with thin slices quickly blanched in hot water are standard — the authentic umami of pork can be fully savored.
