Hasegawa no Shizen Jukusei Ton (Hasegawa’s Naturally Matured Pork) is a distinctly individual brand pork produced by Hasegawa Natural Ranch Co., Ltd. based in Ajigasawa Town, Nishi-Tsugaru District, Aomori Prefecture — born of natural circular agriculture deeply rooted in the Tsugaru land and a unique rearing philosophy. While pigs are typically shipped at around six months of age, this ranch raises them slowly to 300 days of age (approximately 10 months). This extended rearing allows fine marbling to develop throughout the lean, accumulates sweetness and a rich, mellow fragrance in the fat, and produces a meat quality that delivers the full depth and umami of pork as it was traditionally known. The feed is a proprietary blend based on locally-grown vegetables and potatoes raised without pesticides or chemical fertilizers, combined with breadcrumbs from local factories and rice bran — with fermentation bacteria, charcoal, and wood vinegar added for a unique formulation. The barns are spread with carbonized rice husk to maintain a clean rearing environment, and no hormones or antibiotics are used whatsoever. Pig manure is returned as compost to grow vegetables and pasture, whose produce is then fed back to the pigs — a natural cycle practiced throughout the entire farm. Farm staff even speak to the pigs each morning as a measure to reduce stress, and pigs raised freely in this calm environment yield a richly characterful meat quality.
