Shinshu Kome Buta (Shinshu Rice Pork) is a brand pork nurtured by the rich nature of Nagano Prefecture. Its defining feature is a unique approach of finely grinding and giving feed rice (brown rice) during the fattening period to elevate the oleic acid value of the pork. Maruichi Sangyo Co., Ltd., the managing body, produces stable pork under consistent quality management while maintaining close coordination with local livestock farmers. In Shinshu Kome Buta production, brown rice harvested from local paddies is utilized as feed for the pigs — and the manure discharged from the pigs is processed into compost and returned to the paddy fields. This circular production system organically links the region’s agriculture and livestock — highly evaluated as an environmentally friendly initiative. Pork from pigs fed with feed rice has a high oleic acid value — naturally accumulating a clean, sweet fat quality and rich umami. The oleic acid value of the pork is carefully measured for each individual — quality uniformization is pursued. The breed is a three-breed cross — Landrace × Large Yorkshire sow crossed with Duroc male — with shipping at around 180 days of age and approximately 110 kg as the standard. Slaughtered at Hokushin Meat Center, approximately 10,000 head are distributed annually. Brand standards established in 2012, trademark registered in 2013 — reliability and name recognition as a brand are also steadily established. Drawing on the premium fat quality and rich umami, it is suited to a wide range of preparations including shabu-shabu, yakiniku, and ginger pork stir-fry.
