Kagawa Prefecture is known throughout Japan as the birthplace of domestically-grown olive cultivation. Born from giving pigs raised on the Kagawa earth a special feed drawing on local olives — that is ‘Olive Ton’ (Olive Pork). The residual pressings of fruit after extracting olive oil are high-temperature dried and processed into a caramel-flavored feed — giving for 30+ days before shipment at 0.5%+ olive feed mixed into feed containing 8%+ wheat grains is the brand standard. This feed effectively utilizes the by-product of the olive industry — Kagawa-style ingenuity of making full, wasteful use of local resources. By giving feed containing antioxidants (oleic acid, polyphenols, etc.) richly contained in olive fruits — unique changes are born in the pork. Umami components and sweetness components rise — in particular, fructose (fruit sugar) bringing a fruity sweetness is scientifically confirmed to be approximately 1.5 times higher than pigs not given olive feed. When eaten, the flavor of firm lean umami and clean, sweet fat in exquisite harmony spreads. Furthermore, with the characteristic pork off-odor suppressed by the olive feed — the authentic deliciousness of the ingredient can be directly felt.
