Shimabara Maiton (Shimabara Dancing Pork) inherits both the rich umami of Duroc and the finely-grained meat quality of Berkshire — a brand pork representing Nagasaki Prefecture. Nakamura Breeding Pig Farm, based in Shimabara City, Nagasaki Prefecture, is a breeding pig specialist farm that has continued breed improvement for 80+ years across 4 generations — the unique crossing born from that long history and accumulated technique is the foundation supporting the quality of Shimabara Maiton. At the middle slopes of Madake mountain where the farm stands — clear Madake spring water drawn from deep underground is given as drinking water. By combining this mineral-rich famous water with a specially formulated feed with bread crumbs added — finely-grained, moist, and taut premium meat quality is nurtured. When the meat enters the mouth, the fat gently melts and spreads — a premium sweetness and juiciness follows. The fat is richly containing oleic acid — an unsaturated fatty acid — and the clean finish is also a major appeal of Shimabara Maiton. Annual shipments are limited to approximately 600 head — a rare brand pork with very little circulating on the market. Farm HACCP and JGAP obtained — clearing strict standards in both hygiene management and agricultural production process management — safe for the table in terms of safety as well. This pork pairs outstandingly with shabu-shabu — simply dipped quickly in hot broth, the sweetness and softness of the ingredient stands out to the fullest.
