Kagoshima Mochi Buta (Kagoshima Springy Pork), nurtured in the rich nature of Osaki Town, Soo District, southern Kagoshima Prefecture, is a brand pork that Nikushitsu Kenkyuu Farm Co., Ltd. handles consistently from breeding through fattening. As a production characteristic — a division of labor system is in place conducting breeding/development and fattening at separate bases — optimal rearing environment and hygiene/health management are thoroughly maintained at each stage. This division of labor system makes it possible to stably produce high-quality pork while firmly reducing pig stress. A three-breed cross is adopted for the breed — using Duroc male as terminal sire with a cross of Landrace and Large Yorkshire — realizing stability in both umami and meat quality. For the feed — a dedicated compound feed with 10% wheat added in the finishing period is used — carefully managed so that the sweetness and rich umami derived from wheat reaches firmly throughout the entire meat. Also, the dedicated feed is richly containing Vitamin E — drip loss is suppressed — the authentic umami of the meat is difficult to impair — finishing with a satisfying, meat-juice-rich result even after cooking. Shipping at 190–210 days of age — raised slowly over a longer fattening period than standard pigs — producing finely-grained, moist texture. Approximately 37,000 head annually are stably supplied nationwide through Nishi-Nihon Best Packer and Primaham’s distribution network — a pig that allows casually enjoying the rich bounty of Kagoshima at the table.
